7 cups of flour
1/4 cup oil
2 tbsp yeast
2 tbsp salt
5 tbsp sugar
2.5 cups warm water
Add the water, sugar and yeast into a bowl and cover with flour.
Add the oil and salt and knead the dough until it is soft and smooth. Add water or flour until the dough is flexible. Cover and let it rise until it doubles in size.
Split the dough into small to medium bals and let them rise for half an hour.
Heat the oven to 400 degrees F.
In a separate bowl, mix za'atar, lemon juice, olive oil and salt.
Flatten the dough balls to 1/2 inch think, perforate them with a fork and spread the za'atar mixture on them. Let rest for another 10 minutes and bake for 15 minutes.
