Frances Kraft pancakes

This is something my grandma, Frances Kraft, would make and now my mom, Joan Kraft, makes.  The grandkids, my son Alex included, request these often (and sometimes payment for chores is with cottage cheese pancakes).

Ingredients:

1 cup cottage cheese

6 Tablespoons melted butter

4 eggs

1/2 cup flour (or for passover, use matzah meal - adjust amount for consistency)

pinch of salt

Instructions:

Beat eggs lightly, but thoroughly. 

Add cottage cheese, salt and melted butter - mix well

Add flour (matzah meal) and mix well.

Fry at 350 degrees in butter (or oil) for about 2-3 minutes per side. (So - I just heat the butter/oil in the pan and don't pay attention to the temp - cook like pancakes)

Serve with sour cream and strawberry (or your favorite) jelly
